Roasted Pumpkin-Apple Soup

Nothing better than a heart-warming sip of purely homemade pumpkin soup after returning home from work on a rather chilly evening! This vegetarian and vegan recipe gives the classic pumpkin soup we all love a sweet twist with the addition of apples. Makes for the perfect autumnal starter!

Ingredients (serves 12):

• 1.8kg of pumpkins peeled, seeded and cut into 5cm chunks 
• 4 large apples unpeeled, cored and cut into 8 pieces
• ¼ cup extra-virgin olive oil
• 1¼ teaspoons salt
• ¼ teaspoon freshly ground pepper
• 1 tablespoon chopped fresh sage
• 6 cups reduced-sodium chicken broth or vegetable broth
• ⅓ cup chopped hazelnuts, toasted 
• 2 tablespoons hazelnut oil

Gnocchi with Mushrooms & Pumpkin Cream Sauce

This one’s for those who simply can never get enough of pasta! This recipe tastily combines the rich flavour of mushrooms with the velvety texture of pumpkin puree, on top of the pleasant softness of gnocchi. Satiate your taste buds with this appetizing dish of pasta which is guaranteed to keep you reaching for more! 

Ingredients (serves 4):

• 500g packet of gnocchi
• 250g sliced mushrooms
• 1 cup fresh pumpkin puree (alternative: canned pumpkin puree)
NB: To prepare fresh pumpkin puree- Cut the pumpkin in two, remove the seeds, roast it in the oven at 375 degrees for 40-60 mins, then blend it.
• ½ cup half cream
• 3 tablespoons extra-virgin olive oil
• 1 tablespoon chopped fresh sage
• ½ cup sliced shallots 
• 2 tablespoons dry sherry
• ¼ teaspoon salt
• ½ teaspoon ground pepper
• ¼ cup water
• ⅓ cup shaved Parmesan cheese

• Nonstick cooking spray
• 1⅓ cups plain flour
• ¾ cup buckwheat flour
• ⅓ cup brown sugar
• 1½ teaspoons baking powder
• ½ teaspoon baking soda
• 1 teaspoon ground cinnamon
• ½ teaspoon salt
• 2 eggs, lightly beaten
• 1 cup fresh pumpkin puree (alternative: canned pumpkin puree)
